Sharpen the theory and practice of Coffee Value Assessment (CVA). Use physical, descriptive, affective and extrinsic assessments to evaluate coffees from many perspectives. Pass every assessment to become a licensed Q Grader.

who it’s for
  • Advanced professionals - production roasters, green buyers, quality managers and experienced cuppers.
  • For those already comfortable with cupping protocols, sensory evaluation and green grading.
prerequisites
  • None mandatory.
note - Prior experience with the practical mechanics of CVA forms is strongly recommended.

What you’ll learn

CVA Foundations

  • Study the four zones - Physical, Descriptive, Affective, Extrinsic.
  • Apply CVA across samples regardless of species or processing.
  • Run separate sessions to remove bias and build high-res profiles.

Physical Assessment

  • Grade green on a 350g sample for colour, moisture and size.
  • Classify whole-bean vs part-bean defects.
  • Convert raw defect counts to full defect equivalents.

Sensory & Descriptive Acuity

  • Calibrate basic taste solutions and modality intensities.
  • Match olfactory perceptions to official category examples.
  • Use CATA lists and 15-point scales for fragrance to mouthfeel.

Affective & Extrinsic Evaluation

  • Rate liking on 9-point affective scales for target markets.
  • Separate objective descriptive from subjective affective terms.
  • Record uniformity and distinguish defects from style attributes.
  • Document the five extrinsic categories of value.

Real-World Value Matching

  • Switch between single- and multi-perspective cuppings to match buyers.
  • Identify irregular samples and preparation problems blind.
